Today after having been ill and stay indoors almost a month. It is a first time I feel strong enough to go out for a walk. It is a lovely sunny day and no wind. It’s a perfect day to go out. On the way we found lots of giant oyster mushrooms. We collected some and turned into our lunch and was simply delicious.

Oyster mushrooms, scientifically known as Pleurotus ostreatus, are a popular edible mushroom variety. They are named after their oyster-like shape and appearance. Oyster mushrooms have a smooth, white to pale gray or tan color and can grow in clustered groups.
These mushrooms have a mild, delicate flavor and a slightly chewy texture. They are often described as having a subtle earthy and nutty taste. Oyster mushrooms can be used in various culinary applications, including sautéing, stir-frying, grilling, or adding to soups, stews, and pasta dishes.
In terms of nutrition, oyster mushrooms are low in calories and fat while being a good source of protein, fiber, vitamins, and minerals. They are particularly rich in B-vitamins, potassium, selenium, and antioxidants.
When selecting oyster mushrooms, look for firm, fresh ones with a slightly sweet smell. Avoid mushrooms that appear slimy or have a strong odor. Proper storage involves keeping them in a paper bag or cloth in the refrigerator, which helps to maintain their freshness for a few days.
When cooking oyster mushrooms, it is recommended to clean them lightly with a damp cloth or brush rather than washing them with water, as they can absorb too much moisture and become soggy. Oyster mushrooms are versatile and can be enjoyed by vegetarians, vegans, and meat lovers alike.
Oyster mushrooms (Pleurotus ostreatus) are known for their various health benefits. Some of the medical properties of oyster mushrooms include:
1. Immune-boosting properties: Oyster mushrooms contain beta-glucans, which have been shown to enhance immune function and help the body fight off infections.
2. Antioxidant activity: Oyster mushrooms are rich in antioxidants, such as ergothioneine and selenium, which help protect cells from damage caused by free radicals and reduce inflammation.
3. Cholesterol-lowering effects: Studies have suggested that oyster mushrooms may help lower cholesterol levels, which can contribute to heart health and reduce the risk of cardiovascular diseases.
4. Anti-inflammatory effects: The compounds found in oyster mushrooms have been shown to have anti-inflammatory properties, which may help reduce inflammation in the body and alleviate symptoms of certain conditions.
5. Antimicrobial properties: Oyster mushrooms have been found to possess antimicrobial properties, which can help fight off harmful bacteria and viruses, potentially reducing the risk of infections.
Overall, incorporating oyster mushrooms into your diet can be a healthy choice due to their various medicinal properties. However, it is always important to consult with a healthcare professional before making significant dietary changes or using mushrooms for medicinal purposes.
