Taishan Eel Rice is a highly representative and traditional delicacy from Taishan, Guangdong, featuring fresh, meaty local eels and high-quality long-grain rice as its primary ingredients. The preparation method is unique: the eel is deboned live and sliced or shredded, then marinated with seasonings like shredded ginger, minced garlic, scallions, soy sauce, and oyster sauce to infuse it with flavor. Next, the rice is washed and placed in a traditional clay pot to cook until semi-done. The marinated eel is then spread over the surface of the rice, and the pot is left to simmer over low heat. During this process, the rice fully absorbs the savory juices of the eel and the complex aroma of the marinade, while the eel meat remains tender and smooth. Before serving, a drizzle of cooked oil and soy sauce is often added, along with a sprinkle of chopped scallions or cilantro. When the lid is lifted, a fragrant steam erupts.
