台山黃鱔飯是廣東台山一道極具代表性的傳統美食,以本地產的肥美黃鱔和優質絲苗米為主要原料。其做法獨特,先將黃鱔活宰去骨,切成鱔片或鱔絲,用薑絲、蒜蓉、蔥花、醬油、蠔油等調味料醃製入味。接著將米洗淨放入傳統瓦煲中,煮至半熟時,將醃好的黃鱔鋪在飯面上,繼續用慢火燜煮。米飯在烹煮過程中充分吸收了黃鱔的鮮甜肉汁和醬料的複合香氣,而鱔肉則保持了嫩滑的口感。上桌前,常會淋上少許熟油和醬油,撒上蔥花或香菜,打開煲蓋時香氣四溢,米飯粒粒分明,色澤金黃,鱔香與飯香完美融合,口感豐腴,風味濃郁,是台山人宴客和家庭聚餐中的經典菜餚,也是海外台山僑胞心心念念的家鄉味道。

Taishanese people were pioneers among early Chinese immigrants to the United States, primarily hailing from the Sze Yup region of Guangdong province. Beginning with the California Gold Rush in the mid-19th century, they arrived in large numbers, becoming a major labor force in the construction of the Transcontinental Railroad, as well as in mining and agriculture. The Taishanese dialect was once the lingua franca of American Chinatowns. Despite their significant contributions to the nation's development, they endured long-term, systemic racial discrimination, epitomized by the Chinese Exclusion Act of 1882, which severely restricted Chinese immigration and denied them basic rights. Nevertheless, with unwavering resilience, the Taishanese people established strong communities in a foreign land, supporting each other through clan and family associations. The structure of Chinese immigration changed after World War II, especially with the passage of the Immigration and Nationality Act of 1965. However, Taishanese immigrants and their descendants continue to achieve prominence in fields such as politics, business, and culture, making an indelible contribution to America's multicultural society. Their history is a central chapter in the story of Chinese American perseverance and success.

Taishan Eel Rice is a highly representative and traditional delicacy from Taishan, Guangdong, featuring fresh, meaty local eels and high-quality long-grain rice as its primary ingredients. The preparation method is unique: the eel is deboned live and sliced or shredded, then marinated with seasonings like shredded ginger, minced garlic, scallions, soy sauce, and oyster sauce to infuse it with flavor. Next, the rice is washed and placed in a traditional clay pot to cook until semi-done. The marinated eel is then spread over the surface of the rice, and the pot is left to simmer over low heat. During this process, the rice fully absorbs the savory juices of the eel and the complex aroma of the marinade, while the eel meat remains tender and smooth. Before serving, a drizzle of cooked oil and soy sauce is often added, along with a sprinkle of chopped scallions or cilantro. When the lid is lifted, a fragrant steam erupts. The resulting dish boasts distinct, golden-colored grains of rice perfectly fused with the flavor of the eel, offering a rich and savory taste. It is a classic dish for banquets and family gatherings in Taishan and a nostalgic taste of home for a great many overseas Taishanese people.
