Prepare varieties of Sambar with this Udupi Brahmin style aromatic Huli Pudi or Sambar Powder. Narrated in Kannada with English subtitles.

This Sambar makes it super easy for you to prepare Sambar from vegetables like Bendekayi/Okra, Mangalore Cucumber/Southekayi, Radish/Moolangi, Carrot Beans, etc. I spoke to many including a couple of chefs to come up with this recipe. Try this recipe if you want to come up with a tasty Sambar with a special aroma.

Ingredients:

Coriander Seeds - 1/2 Cup or 40 grams
Cumin Seeds - 1 Tbsp or 6 grams
Urad Dal - 2 Tbsp or 25 grams
Bengal Gram - 2 Tbsp or 20-25 grams
Fenugreek Seeds - 1 tsp or 5 grams
Red Chillies - 25-30 or 40 grams
Curry Leaves - 10-15
Coconut Oil - 2-3 tsp

Method:

1. Add 1 tsp Oil to a pan.

2. Add 30-35 Red Chilies.

3. Add 15-20 Curry Leaves.

4. The Red Chillies and Curry Leaves should be roasted on medium flame.

5. The Curry Leaves should change their color and turn crisp. Also, Chilies should fluff up and have to change their color.

6. Transfer to a plate and allow to cool completely.

7. Add 1 tsp Coconut Oil to another pan.

8. Add 1/2 Cup of the Coriander Seeds.

9. Roast the Coriander seeds in low to medium flame.

10. The Coriander seeds should change their color slightly and turn crisp.

11. Transfer the roasted Coriander Seeds to another plate and allow them to cool completely.

12. Add 1/2 tsp Oil to the same pan.

13. Add 2 Tbsp Channa Dal and roast the same.

14. Roast the Channa Dal till it changes its color slightly and starts to shrink.

15. Transfer to the same plate like the one with the roasted Coriander seeds and allow to cool completely.

16. Add 1/2 tsp oil to the same pan.

17. Add 1 Tbsp Cumin Seeds / Jeera.

18. Roast the Cumin Seeds in low flame.

19. The Cumin Seeds will change color and turn crisp and you should roast till you can smell the aroma of roasted Jeera/Cumin Seeds.

20. Transfer the roasted Cumin Seeds to the same plate and allow to cool completely.

21. Add 1/2 tsp Oil to the pan. Add 2 Tbsp Urad Dal. Roast the Dal in low to medium flame. The Urad Dal should turn light brown in color.

22. Transfer to the same plate as before and allow to cool.

23. Add 1/2 tsp Oil to the pan. Add 1 tsp Menthya or Fenugreek Seeds. Roast in low to medium flame. Do not add extra Menthya Seeds; the Sambar Powder may acquire a bitter taste. Roast only till the seeds turn slight brown in color. Transfer to the same plate.

24. Add roasted Red Chillies and Curry Leaves and grind to a coarse mixture. Grind to a coarse mixture. Transfer this to a plate.

25. To the same mixer jar, add other roasted ingredients and grind them.

26. Transfer the powder to the same plate to which the Red Chilli Powder and mix them.

27. Hand mix the ingredients well. Once everything is mixed well, grind them all again.

28. Now the Sambar Powder or Huli Pudi is ready. Quality cooking wares that I love and recommend. Many of these I use every day in my kitchen and in the videos as well. Thank you.
