Amla candy is a nutritious and popular dried sweet or tangy snack made from Indian gooseberry, known as amla. Praised in Ayurvedic medicine as a superfood, the candy offers a concentrated dose of Vitamin C and antioxidants in a form that is easy and enjoyable to consume. 

Ingredients
250gm fresh amla (Indian gooseberry)
2 tbsp granulated sugar
1 tbsp powdered sugar (for coating)
1/2 tsp rock salt

1. Prepare the amla
1. Wash the amla thoroughly and ensure there are no bruises.
2. Bring a large pot of water to a boil.
3. Add the amla and steam for 8-10 minutes, until they become tender. Do not overcook them, as they become mussy .
Marinate
1. Once the amla is cool, press each one gently to separate the segments, and discard the seeds.
2. In a bowl with a lid, arrange the amla segments and cover them evenly with the granulated sugar and salt.
3. Cover the bowl and let it sit at room temperature for about one to two days, or until the sugar has completely melted and formed a syrup.
Dry the candy
1. Drain the amla from the sugar syrup using a sieve. You can save the leftover syrup to make a refreshing drink.
2. Spread the amla segments on a tray making sure they are in a single layer with enough space for air circulation.
3. Place the tray in direct sunlight to dry for 2–3 days, or until the amla becomes chewy and dry.
4. Alternatively, you can dry the amla indoors using a food dehydrator or an oven set to the lowest temperature. 
Add the final coating
In a clean bowl, Add the dried amla segments and toss well to coat them evenly with powdered sugar
Store and enjoy
Store the prepared amla candy in an airtight container in a cool, dry place. It can last for several months.
