Spiralized Beet Noodles with Goat Cheese and Walnuts

Ingredients:
Beets – 2 large
Goat cheese – 50 g
Walnuts – 30 g
Fresh thyme – a few sprigs
Olive oil – 2 tbsp
Balsamic glaze – 1 tbsp
Salt, pepper – to taste

Preparation:
1. Spiralize the beets into thin noodles.
2. Toast the walnuts in a dry pan until fragrant.
3. In a large bowl, toss the beet noodles with olive oil, salt, and pepper.
4. Top with crumbled goat cheese, toasted walnuts, and fresh thyme.
5. Drizzle with balsamic glaze before serving.
