Machi Bhaat and Yellow Coconut Rice (Pot in Pot)

I use Haddock fish — you can use any fish

Fish marinade:
Wash, thaw and cut fish in pieces not too small I got 6 pieces from my two fillets.
Then pat dry.
½ tsp turmeric
½ tsp red chilli powder
1 tsp coriander/cumin powder
1 tsp lemon juice
½ tsp garlic paste
1 tbsp oil
1 tsp salt or to taste and
mix the above ingredients coat on both sides of the fish - put on a non-stick foil in a tray and grill for 10 minutes on one side only. Let it cool.

Now prepare Fish gravy:
1 medium onion finely chopped,
1 fresh tomatoes crushed completely,
¼ tsp red chilli powder or to your taste,
1 tsp salt,
½ tsp turmeric
2 tbsp yoghurt (mix well with little water)
¾ can or leftover coconut milk
¼ cup water
1 tbsp coconut oil
3 potatoes peeled and cubed medium size (we love potatoes you can put few)
Handful chopped coriander leaves
1 tsp lemon juice

In the main pot add one tbsp coconut oil, add onions and sauté, when translucent and soft add crushed tomatoes and all the spices mix well add the spices and cook well then add yogurt and ¼ cup coconut milk and ¼ cup water, add potatoes- put your trivet and rice pot on the trivet.

For Rice:
1 cup rice (I used Tilda Basamti rice )
1 ¼ cup of water with coconut milk (1 water, ¼ coconut milk)
1 tsp salt
½ tsp turmeric
2-3 cloves
2 cinnamon stick

Wash rice and put in small stainless bowl. Add all of the above ingredients and mix.

Close lid and use rice mode 12 mins. When done after 5 mins QR (quick release) open the lid your rice will have cooked nicely. Remove rice and trivet.

Add the balance of coconut milk in the pot and turn sauté on low, add little bit of chopped coriander leaves let sauté for 2-3 minutes. Then cancel sauté - add cooked fish in the pot - the gravy will still be boiling just mix it gently so the fish doesn't break but gets coated with coconut gravy - when it stops boiling, add lemon juice mix, garnish with cilantro and enjoy with rice and kachumber.

If you have time put on slow cook for 1/2 hour to enhance flavours further.
