Welcome to the first episode of my fall soup series, Hello Soup Season! Today, I’m sharing a cozy and hearty Italian Sausage & Tortellini Soup recipe that’s perfect for cooler weather. This savory soup is packed with flavor, featuring ingredients like fresh tortellini, kale, and a creamy tomato base. It’s sure to become a fall favorite!

Ingredients:

Italian sausage
Fresh kale
Fresh tortellini
Crushed tomatoes
Tomato paste
Fresh garlic
Bell peppers
Onions
Celery
Heavy cream
Flour
Chicken broth
Parmesan cheese (for topping)
Recipe steps:

Heat oil in a dutch oven pot.
Add tomato paste and cook down.
Toss in the veggies—bell peppers, onions, celery, and garlic—and sauté until softened.
Add the Italian sausage, season, and cook until browned.
Stir in crushed tomatoes, then add chicken broth and bring the soup to a boil.
While boiling, mix heavy cream and flour.
Add fresh tortellini and let cook for 4 minutes.
Finish by adding the cream mixture and kale, cooking on low until the kale is wilted.
Top with Parmesan cheese and enjoy!
