Som Pa- Lao cured-pickled fish

(This is cured (raw) fish so please follow your own health and safety food guidelines)

6 tilapia fillets
cooked sticky rice size of small lime
1.5 cups of water
8 cloves of garlic
2 spoonful of salt (or so)
2–3 pinches of sugar

Allow to cure 2-3 days at room temperature and away from sunlight. Then refrigerate for 2 days more.

If your kitchen is sweltering hot less than 24 hours then refrigeration. The fish will continue to cure in the fridge too.

Som pa is ready in about 5 days of curing.

Enjoy with sticky rice and peppers! Saap saap!
