Arepa Dough Recipe:
(Makes 5–6 Arepas)
-2 cups pre-cooked cornmeal
-2 ¼ cup stock or water
-½ teaspoon salt
-Optional: 1 teaspoon cooking oil

1. To a bowl, add cornmeal, salt, and oil. Gradually add the stock or water, mixing the dough with one hand in a circular motion until the dough is hydrated, but not too sticky.
2. Form balls with the dough, then press down to form round arepas.

Pan-Grilled Arepas:
1. Heat your non-stick pan or griddle to medium heat. You know it’s hot enough when you sprinkle some water drops and the drops glide around the pan.
2. Add the arepas, ensuring they are not touching, and cook for 5–6 minutes per side until the outside is toasty and golden.

Fried Arepas:
1. Over medium-high heat in a frying pan, heat a neutral frying oil such as canola or vegetable oil.
2. Fry the arepas for 3–4 minutes per side, until golden on the outside. Let drain on a dry paper towel.

Baked Arepas:
1. If making arepas for a large crowd, double the portion for the basic arepa dough recipe.
2. Preheat the oven to 425F. Lightly oil the source of two oven-safe trays, add your arepas and cover with aluminum foil. Bake for 20 minutes, covered.
3. Remove the aluminum foil, flip the arepas, and bake for 20 more minutes, uncovered, switching their position in the oven racks.
