It’s time to boost immunity!
Pumpkin has an impressive nutrient profile and is particularly rich in Vitamin A.
The tang of tamarind works really well with sweet and earthy flavour of pumpkin. Make this healthy and quick recipe for midweek meal.

Preparation time - 5 minutes
Cooking time - 25 minutes
Serves- 2 persons

Ingredients as required in the recipe:

1. Pumpkin - 300 grams (medium size pieces)
2. Mustard seeds (rai) - 1 teaspoon
3. Curry leaves - 10-15
4. Fenugreek seeds (methi dana)- 1 teaspoon
5. Green chilli - 1 (finely chopped)
6. Tamarind water - 3 tablespoon
7. Turmeric powder - 1/4 teaspoon
8. Salt - 1 teaspoon
9. Tamarind (dry)
Note: To prepare tamarind water, soak few pieces of tamarind in hot water for 5 mins.

How to make Chatpata imli pumpkin:

1. Heat 1 tablespoon oil in a pan.
2. Add mustard seeds and let it splutter.
3. Add curry leaves and fenugreek seeds. Cook well.
4. Add pumpkin pieces and cover the pan.
5. Cook in low flame for 5 minutes.
6. Add tamarind water, salt and turmeric powder.
7. Give it a good mix and cover the pan for 5 mins.
8. Add few pieces of tamarind and 1/2 teaspoon sugar (optional). Let it cook for 3-4 mins.
