Puran Poli Tacos

Ingredients:
For the Filling:
*Chana dal*: 1/2 cup
*Toor dal*: 1/2 cup
*Sugar*: 3/4 cup (or slightly less)
*Almonds*: 1/4 cup
*Ghee*: 1/2 cup
*Cardamom powder*: 2 tsp
*Saffron*: 1 tsp
*Nutmeg*: 1/2 tsp

For the Spice Mix:
*Cloves*: 10
*Cinnamon stick*: 1 stick

For Garnish:
*Almonds*: 1/4 cup
*Pistachios*: 1/4 cup
*Honey*: 1 tbsp
*Spice mix*: 1/2 tsp

For Almond Paste:
*Soaked almonds*: 1/4 cup (soaked overnight, peeled)
*Milk*: as needed

For Saffron Milk:
*Saffron*: 1 tsp
*Milk*: 2 tbsp

For the Atta Dough:
*Wheat atta*: 1 cup
*Ghee*: 1 tbsp

#### Method:

1. Prepare the Spice Mix:
In a grinder, combine the cloves and cinnamon stick. Grind into a fine powder. Set aside.

2. Make the Almond Paste:
Grind the soaked and peeled almonds with a little milk to make a smooth paste. Set aside.

3. Prepare Saffron Milk:
Soak saffron in 2 tbsp of milk and set aside.

4. Cook the Dal Filling:
Soak both chana dal and toor dal in water for 2 hours.
Pressure cook the soaked dals for 3 whistles.
Heat ghee in a kadai (wok) and add the almond paste. Sauté for a minute.
Add the cooked dal and sauté for another minute.
Add sugar and cook for a few minutes, stirring continuously.
Mix in saffron milk, spice mix, cardamom powder, and nutmeg.
Continue cooking until the filling thickens and starts to leave the sides of the pan.
Remove from heat and let it cool completely.

5. Prepare the Atta Dough:
Mix the wheat atta with ghee and enough water to make a soft dough. Cover and set aside.

6. Prepare the Garnish:
Finely chop the almonds and pistachios. Roast them in a pan until slightly golden.
Mix the roasted nuts with the spice mix and honey. Set aside.

7. Assemble the Puran Poli Tacos:
Roll out the atta dough into large, thin chapatis.
Cut each chapati into a round shape.
Heat a pan and roast each chapati on both sides until half-cooked.
Spread a layer of the puran filling on one half of the chapati.
Sprinkle the dryfruit spice mixture over the filling.press nicely
Fold the chapati in half to cover the filling, or fold into a taco shape if preferred.
Return to the pan and cook with a little ghee until the taco is golden and crispy.

8. Serve:
