“I didn’t enjoy eating.” is a sentence we often heard from elderly people. It might not mean the food isn’t delicious but perhaps it’s a result of eating behavior or medical problems. Once they loss the appetite or can eat less food, some people decided to add more tastes by intensely seasoning their food with more sugar, fish sauce or seasoning powder. It affects their nutritional status and brings long-term health problems. This is the cause of taste perception in elders research. This comparative research was conducted by collecting data from elderly people in Thailand and Japan focusing on their taste perception which reflects their eating behavior. The result of the research is quite shocking. Since taste sensitivity thresholds of Thai people are very high compared to Japanese’s; therefore, Thai people are in higher risk of being sick with non-communicable diseases.(NCDs)
