Welcome back to my channel. Here I'm with one more delicious Pork Recipe..i.e Pork Roast recipe..
This recipe is requested by many of my viewers. Thank you for trusting in me❤️.
This is an Authentic Mangalorean Pork Roast Recipe.

To begin with, let's roast the masala.
2 tsp Coriander seeds
1 tsp Jeera/Cumin seeds
1 tsp Peppercorns
1 star anise
5 cloves
2 cinnamon stick(small)
1/4 tsp Poppy seeds (optional -if available can be added)
10 Red chillies (Baydgi)
Roast on medium heat, do not burn.
Keep it aside to cool, later grind to fine powder

Take 1 kg Pork (boneless -separated bone)
Less fat meat is recommedable.
To this address below ingredients:
1 tsp salt
1 tsp Turmeric powder
2 tbsp Roasted powder (ground masala powder) reserve for later use.
2 tsp Vinegar
Combine well.
Once done. Keep it aside for marination atleast for 30 min or 1 hour in the fridge.
After 30 min. Take out the meat to fry/roast the meat.
Take a pan, add little oil, once the oil is hot add marinated pork.
In the beginning, keep the flame high and stir continuously.
After 2-3 minutes add 15 garlic flakes and 1.5 inch ginger (chopped).
At this time, do not add onion, as onion will have water content as well as meat too will release it's water..hence add only ginger & garlic.
Cover and cook but don't add water.
Since we freeze the meat, water will automatically release.
Stir in between and check the water.
Once the meat starts its cooking process, lower the heat, or else,water will dry up but meat wont be tender.
Once the meat is tender or cooked (refer the video), flame off and keep it aside or remove the meat and keep it aside.
On the same pan or can be used other pan, add
2 tbsp oil, to which add 2 tbsp garlic (chopped) 1/2 inch ginger and 3 green chillies -slit
Fry for 2 minutes,
Add 2 medium size onion or 1 large size onion cut into cubes
Fry for 2-3 minutes.
Now add roasted pork and keep the flame high, stir continuously.
Add salt to taste - check and add.
Also add reserved ground roasted masala.
(Reason being adding the masala powder to give a nice and perfect texture to the dish).
Reduce the flame to medium, combine well .
Garnish with curry leaves or coriander leaves.

Notes: whenever we cook pork, ensure to add proper quantity of Ginger and garlic to avoid stomach related issues.
