Today on Booze On The Rocks I show you How I Acid Adjust a Watermelon Margarita. This is much simpler then it sounds, in fact Dave Arnold has a basic recipe for this in his book Liquid Intelligence. This is one of those Mezcal cocktail recipes that tastes go good you'll want more than one. Let us know what you think.

STRAWBERRY SOUR (Original Recipe)

2 oz//60 ml Mezcal
.75 oz/22.5 ml Orange liqueur
.55 oz/22.5 ml Adj. Watermelon Juice***
1 Bsp/5 ml agave Syrup

Method

1. Add all cocktails to the shhaker tin.
2. Shake with ice for 15 seconds.
3. Fine Strain into a rocks glass rimmed with over fresh ice.

Adj. Watermelon Juice

The basic recipe follows thhis pattern. For every 100 ml of fluid add 4% Citric Acid and 2% Malic Acid.

400 ml Watermelon Juice
@4% = 16 g Citric Acid
@2% = 8 g Malic Acid
