As September rolls in and the crisp autumn air settles, we're embracing the season with our favorite fall-inspired bratwursts. Join Seth & Scott Perkins, The Bearded Butchers, as they guide you through making two tasty seasonal sausages: Pork Pumpkin Cranberry and Apple Cinnamon bratwursts!

In today’s video, we’re starting with fresh pork from our very own butcher shop, Whitefeather Meats. Watch as we transform pork trimmings into these incredible fall flavors.

For the delicious Pork Pumpkin Cranberry Bratwursts, The Bearded Butchers start with one batch of 25 lbs of pork meat with a preferred fat ratio of 75/20 or 80/20. Then, we infuse this mixture with pumpkin seasoning and grind it using the Made With Meat 22 Dual Grind Grinder. To complete the autumn flavor profile, The Bearded Butchers incorporate the dried cranberries. For the Apple Cinnamon Pork Bratwursts, we followed the same method: seasoned the second batch of 25 lbs of pork with apple cinnamon sausage seasoning, ran it through the grinder, and blended in the dried apple pieces.

Once seasoned and ground, we stuff both sausage blends into 32mm fresh collagen casings, link them, and put them through our vacuum sealing machine.
