Colonche! 🙌🌵🍷

A ancient fermented drink from the Mexican Altiplano! Made by peeling, crushing, and fermenting the fruits, or “tunas”, from the prickly pear cactus. Though it is not commercially produced, it can still be found in rural communities in Guanajuato and San Luis Potosí during the August/September fruiting season. I was fortune enough to attend the Feria del Colonche on Laguna de Guadalupe this year, taste a bunch of the locally produced Colonche, and learn how @elhijodeguanajuato harvest their tunas and prep their Colonche. Thanks to the company and translation assistance from @dario.off.dry it was a WILD time!

I’m so happy to be able to brew this one back in Guelph @brothersbrewingcompany and give our customers a chance to try it! I ended up yielding 20Litres, so if won’t be around for very long. Get down here and try a glass and give Loteria on our game shelf a try!
