Welcome to my channel if it's your first time.
This normally isn't a cooking channel only I've recently been practicing making scrambled egg.

This is a video about the chemistry of eggs with some suggested do's and don'ts for anyone to follow when they're making their own scrambled egg. The inspiration to make this video I got from eating the scrambled eggs at the Black Cat Cafe on Mill Road, Cambridge UK.

They make it very tasty and they use a lot of butter but I've always liked the texture and way they make it there so much that I've been trying to replicate it.

I picked up some tips from a video with Gordan Ramsay. I then decided to look up the chemistry of why eggs turn grey if you season them too early and why Gordan Ramsay says you shouldn't beat the eggs in a bowl first. I think the latter is just a matter of taste, beating in a bowl first ensures uniform texture while beating it gently as you cook gives a more layered or marbled result.
Over beating can introduce air changing the texture. It can infact cause some of the fats and proteins to oxidise but only very slightly and it is not a health risk. If exposed to the air for a longer period this could effect the flavour and cause the colour to lose vibrancy.

Medium high heat is good for the stove but you should frequently remove the pan from the heat when cooking so that the egg doesn't denature too quickly and turn rubbery.

Why do rotten eggs smell bad? simply put it's because they contain sulfur.

Thiol compounds form when some of the egg proteins break down. I already knew about hydrogen sulfide gas but not the other thiol and the sulfide compound.

Methanethiol is what is added to natural gas to alert people to any gas leaks.

Dimethyl sulfide is not necessarily unpleasant smelling in small concentrations. In large concentrations it would be. In large industrual volumes DMS can lead to cloud condensation nuclei. This is because it oxidises to for sulfur dioxide and other sulfur-containing compounds that lead to aerosols which can influence the weather patterns.
