🔹 1 cup fresh dill, stems removed, chopped
🔹 1 1/4 cup Greek yogurt
🔹 1 tbsp Extra virgin olive oil
🔹 1/2 lemon or lime, juiced
🔹 Pinch cayenne pepper, optional
🔹 Kosher salt, if needed
For the Grilled Chicken:
🔹 10 garlic cloves minced
🔹 1/2 tsp paprika
🔹 1/2 tsp allspice
🔹 1/2 tsp ground nutmeg
🔹 1/4 tsp ground green cardamom
🔹 Salt and pepper
🔹 5 tbsp Extra virgin olive oil, divided
🔹 8 boneless skinless chicken thighs
🔹 1 red onion, halved and thinly sliced
🔹 2 lemons, juiced
2️⃣ Greek Grilled Chicken
🔹 4 large garlic cloves, minced
🔹 2 teaspoons dried oregano
🔹 1 teaspoon sweet paprika
🔹 1 teaspoon fresh thyme leaves
🔹 2 tablespoons finely chopped flat leaf parsley leaves and tender stems
🔹 1/3 cup extra virgin olive oil
🔹 1 lemon, zested and juiced
🔹 Kosher salt
🔹 Black pepper
🔹 1 1/2 to 2 pounds chicken
3️⃣ Grilled Sumac Chicken
For the Marinade
🔹 1 medium yellow onion, quartered
🔹 3 large garlic cloves
🔹 2 teaspoons sumac, plus more for garnish
🔹 1 teaspoon Aleppo pepper
🔹 1 teaspoon coriander
🔹 1/2 teaspoon ground allspice
🔹 1 lemon, juiced
🔹 Extra virgin olive oil
🔹 8 to 10 boneless skinless chicken thighs (about 2 pounds)
🔹 Kosher salt
🔹 Black pepper
4️⃣ Grilled Chicken Breasts
🔹 1 1/2 pounds boneless skinless chicken breasts
🔹 2 teaspoons Italian seasoning (homemade or store-bought)
🔹 1/2 teaspoon paprika
🔹 1/2 teaspoon red pepper flakes (optional)
🔹 5 large garlic cloves, minced
🔹 2 lemons, zested and juiced
🔹 1/3 cup extra virgin olive oil, plus more for oiling the grill

🔹 1/4 cup chopped Italian parsley leaves, for garnish

🔹 1 large yellow onion, sliced into thick rounds
