I really miss eating nougat candy! I figured it wouldn’t hurt to learn how to make nougat with marshmallow. It’s not too difficult, but it can be a bit time consuming especially the first few tries. I think it’s a great one to try and the ingredients aren’t too hard to come by. After asking my friend for her permission, I have included the recipe she shared below. Nougat [Cantonese]: ngau4 gaat3 tong2
Nougat [Mandarin]: niú gá táng


Recipe -
Ingredients:
300g marshmallows
200g whole milk powder [when mixing with other powders reduce milk powder. IE: 170g milk powder & 30g matcha powder, buy total powder must total 200g]
80g melted butter
a pinch of salt [if desired]
80g - 100g nuts [optional]
freeze dried fruit [add as much as you’d like]

Instructions:
Use nonstick pan to melt butter and marshmallows together on medium low heat [medium might be too hot]
Stir continuously so marshmallows don’t burn
Once marshmallows are almost completely melted, add the powdered milk about ¼ of it at a time. Make sure to mix it in well before adding in the remaining powdered milk
**You need to cook the marshmallows for at least 5 minutes to make sure it’s a good soft consistency/texture. I think about 6 - 7 minutes is good. The longer you cook it, the harder the texture will be, which will work if you prefer a harder texture in a nougat
Once all the milk powder has been incorporated, turn off the heat and add in the add-ins [nuts, dried fruit, etc]
After the add-ins have been mixed in, you can transfer the nougat to the mold. If you don't have a mold you can put it directly onto parchment paper or in a small cake pan, like a 9x9 or smaller. If you use a pan, I HIGHLY recommend lining it with parchment paper. The nougat rectangle/square should be about ½” to 1” thick
Put a sheet of parchment paper over the nougat and begin shaping the nougat into a square or rectangle. If you have a small rolling pin or something similar, you can use that to help you roll out the nougat/even out the surface. If you decide to buy a mold, it should come with 2 rolling pins to use
Allow to cool for at least 2 -3 hours before cutting
You can cut into whatever shape/size you’d like. I cut according to the size on the mold about 2” to 2 ½“ long and about ½” wide. That’s about the size that will fit into the candy wrappers that I purchase. There are other candy wrapper sizes, but this is the size that I currently have
If you don’t want to put them into individual wrappers, you can wrap each one in some parchment/wax paper and put them in an airtight container.
They are freshest within 2 days and should last up to 5 days. I’ve read up to 2 weeks, but that’s up to your discretion.
