I always used small amounts of ingredients in my video. You can easily double the ingredient list if you want to make larger amounts of cordial or jam.

🌼🌼🌼 Elderflower Cordial 🌼🌼🌼
Ingredients:
- 1 kg sugar
- 1.5 liters of water
- 2 lemons
- 1 orange
- 25 g citric acid
- 15-20 elderflower blossoms

Put 1kg sugar and 1.5 liters of water into a large pot. Bring to a boil, and stir until the sugar has dissolved. Remove from the heat and cool.

In the meantime slice two lemons and one orange thinly. Put half of it into a large pot or glass. Remove the stems from the elderflowers and add the blossoms to the glass. The green of elderflowers is poisonous in large quantities, so avoid adding any here. Then layer flowers with lemon and orange slices until the glass is filled up.

Add 25g citric acid to the cooled sugar syrup and stir. Now add the sugar water to the elderflowers. Cover and leave overnight or up to a couple of days at a cool place. 2-3 days later strain the liquid through a fine sieve. Then let the liquid run through a clean cloth. You can reboil the syrup to preserve it even more. Fill the cordial into sterilised bottles and store in the fridge. To serve, mix a little bit of coridal with still or sparkling water.

🌼🌼🌼 Elderflower Popsicles 🌼🌼🌼
Ingredients:
- Small piece of ginger
- 3 lemons
- agave syrup or honey
- 2-3 elderflower sprays
- 1 later of water

First, grate a small piece of ginger. Wash two organic lemons with hot water and grate the zest. Then cut 3 lemons in half and squeeze the juice. Add everything to a large heatproof bowl. Then cut in the blossoms of 2-3 elderflower sprays. Add honey or agave syrup to sweeten it. Stir in 1 liter of boiling water and steep for 15 minutes.

In the meantime you can fill the popsicle containers with different ingredients. I prefer orange slices, mint and some fresh elderflower blossoms. When the water has cooled, sieve everything into a pot or bowl. You can also let it run through a clean cloth to filter it very finely.

Then carefully pour the liquid into the popsicle containers using a funnel. Seal the containers. Put everything in the freezer and wait for about 6 hours. Then the time has finally come and you can enjoy your popsicles.

🌼🌼🌼 Elderflower Tea 🌼🌼🌼
Ingredients:
- 10-20 sprays of elderflowers

Simply place the flowers on kitchen roll and let them dry somewhere shady but with good air circulation. When the batch has thoroughly dried out, seal the blossoms in an airtight container ready for use. You can either rub the flowers off the stems now or later when you prepare them for tea.

🌼🌼🌼 Elderflower Vinegar 🌼🌼🌼
Ingredients:
- 3-5 sprays of elderflowers
- White Wine Vinegar

First of all remove the stems and put the elderflowers into a bottle. Then cover with the vinegar. Shake the bottle gently to cover the blossoms with vinegar. After two weeks, strain the vinegar to remove the elderflowers.

🌼🌼🌼 Elderflower Jelly 🌼🌼🌼
Ingredients:
- 10-15 sprays of elderflowers
- 1 liter of apple juice
- 650g jam sugar

Remove the stems from the elderflowers and add about 10-15 sprays of blossoms to a pot. Add 1 liter of apple juice and leave covered in a cool place for a day.

The next day, heat the pot with the flowers and let it simmer briefly. Then strain the liquid into a pot. Measure how much liquid is left so you know how much jam sugar you need. You need about 650g of sugar for 1 liter of apple juice. Then heat the liquid and add the jam sugar. I always like to add a few blossoms at the end because I think it looks nice.

Pour the liquid into sterilized jars and turn them upside down to create a vacuum. This ensures that the jelly can be preserved longer.Keep the elderflower jelly in a cool dark place. Once you open a jar, keep it refrigerated.
