(EN) Enoforum 2022 Remi Schneider application of Hanseniaspora vineae in wines and cider Zaragossa

Remi Schneider is Oenobrands' product and application manager. He described during the Enoforum 2022 in Zaragossa the tests carried out with Hanseniaspora vineae HV205, the first strain already available on the market.

This strain, commercialised as Fermivin VINEAE, has been tested inoculated as a pure culture or sequentially with Saccharomyces strains. Rémi reported commercial wine trials from different wine regions and with different varieties, studying the practical applications of this strain.
-vinification of neutral varieties (high levels of phenylacetate),
-rosé wines (formation of phenyl acetates, release of norisoprenoids, colour improvement),
-sparkling wines and ciders (distinctive aromatic profiles and rapid autolysis)
-fast ageing on lees.
