This is my recipe for Creamy Coconut Rice Pudding. It is so easy and delicious. Ingredients: 3/4 cup uncooked white or jasmine rice, 13.5 oz can coconut milk, splash or half n' half or whole milk, 1/3 cup white sugar, 1/4 tsp. salt, 1 beaten egg, 1/3 cup flaked sweet coconut or 1/3 cup golden raisins, 1/2 tsp. vannilla extract, 1 tbs. butter.
