Sri Lankan Christmas cake is a cake filled with dried stone fruits, cashew nuts, pumpkin preserve, Ginger preserve, Chow Chow, candied peel and topped with marzipan. Sri Lankan Christmas cake has no flour just semolina to hold it together and we also add a lot of candied fruits that don’t exist internationally, but you can buy these candied fruits in any Sri Lankan grocery store. Also, it’s so rich, with brandy, rose water, Almond and Vanilla essence, cashew nuts, which are all very Sri Lankan ingredients but the concept of Christmas cake is pretty much the same in any country, a rich mix of fruit, mixed with very little cake batter.
