(Marble cake)

This cake is sometimes known as (Keik Georgrafias) Geography cake, but in my house it is called Yiayias Anna’s cake (grandma’s cake). My mum used to make it for us on special occasions. It is the very first cake my mother taught me to make when I was very young. My mum would use a glass to measure her ingredients and I still do this today. Why break the tradition? It is still a popular cake in my house and throughout my family. I have passed the recipe on to my nieces along with cake tins which I brought from Cyprus. I am hoping this recipe and my mum’s memory survives through many generations and I’m now passing it on to you. This cake is perfect served with a cup of tea or coffee in the afternoon.

(Serves 10-12)

1 glass or 200ml (7floz) vegetable oil
1 glass or 225g (8oz) caster sugar
3 large eggs or 4 small
Juice of 2 oranges and the zest of 1
1 glass or 200ml (7floz) milk
Few drops of vanilla extract
3 ½ glasses or 450g (1lb) plain fine flour
3 tsp baking powder
3 tbsp. cocoa powder or
100g (4oz) dark melted chocolate
2 tbsp. milk – extra
1 x 2 pint Bundt tin greased really well and floured
For the topping
Icing sugar
Or melded chocolate
Slivers of nuts, optional

Method

Pre-heat the oven to 180oc – 350of or Gas Mark 4.
Beat together the oil and sugar in a mixing bowl and gradually add the eggs one at a time. Mix in the orange juice, zest, milk and vanilla extract and fold in the sifted flour and baking powder until smooth

Take one third of the cake mixture, place it in a small jug and mix in the cocoa powder or melted chocolate with 2 tbsp. of milk, to thin it out.

Pour half the plain cake mixture (not the cocoa) into a greased and floured 1.2litre (2 pint) cake ring (Bundt or Fluted cake round pan) and pour the cocoa mix into the ring, mix lightly with a skewer or a fork. Pour the remaining cake mixture on top and do not worry if the cocoa mixture is not completely covered. Tap the cake ring gently to level the surface and bake in the pre-heated oven for approximately 45-50 minutes or until the cake is nicely brown (test with a skewer), do not overcook.

Allow the cake to cool in the tin for 10 minutes, then remove and dust with icing sugar or decorate with melted chocolate.
