Homemade buttermilk culture so you never run out of buttermilk.

Did you know that buttermilk is an active culture like yogurt? This means you can make your own for drinking or recipes. It freezes perfectly for later use as well. Perfect in pancakes, biscuits, fried chicken, breads, mashed potatoes, doughnuts, tortillas, even as a meat tenderizer.

To make your starter
1c. of good high quality buttermilk
milk
clean jar up to a half gallon.
Place your buttermilk in the clean jar, add milk up to the top. I use a quart but you can make up to a half gallon with the same amount of buttermilk starter. Place a lid on the jar and give it a little shake. Place it on the counter for 24 hours. Put in the fridge and use as needed.

To make buttermilk the next time
Use the same recipe, but use your own buttermilk instead of store bought. You can keep this going as long as you want. You can use a defrosted bag of buttermilk to start your buttermilk up again if you don't want to have it going all the time in the fridge.

To freeze buttermilk
I measure out 1c. of buttermilk and put it in a freezer bag. I label them with a market and pop them in the freezer. To defrost I put the bag in a bowl of cool water. Use as usual. You will not be able to tell the difference in a recipe. If you plan to drink it you will see a slight difference in texture after it has been frozen.
