Now let’s get started! Here’s what you’ll need:

Materials Needed:
1 cup of water
¼ cup of sugar
1 cup of sweet rice flour
Cornstarch
Food Coloring (optional)
Cookie Cutter (optional)
Whisk
Spatula
Favorite Ice Cream
Ice Cream Scoop
Rolling Pin
Plastic Wrap
Egg Carton
Baking Sheet

Homemade Mochi Bites Step-by-Step Instructions:

(1:34) Step 1: Scoop ice cream into balls and place on a baking sheet lined with parchment paper.
(1:47) Step 2: Place baking sheet in the freezer. Freeze for at least one hour. Now it’s time to make the mochi!
(1:50) Step 3: Combine rice flour, granulated sugar, and powdered sugar into a microwave-safe bowl.
(2:01) Step 4: Add water and stir all the ingredients until smooth.
(2:05) Step 5: Now add water and food coloring to the bowl and stir to combine.
(2:18) Step 6: Cover the bowl with plastic wrap and microwave mochi dough for 1 minute.
(2:25) Step 7: Mochi is very sticky! So wet your spatula to keep it from sticking and use your spatula to repeatedly fold the mixture. Cover, and microwave again for 1 minute. Fold the dough again and microwave for 30 more seconds.
(2:35) Step 8: The mochi should look slightly shiny. If it doesn’t, microwave 30 more seconds.
(2:42) Step 9: Place a piece of parchment paper on the counter and dust it with a layer of cornstarch. Use a rubber spatula to scrape the mochi dough from the bowl and onto the parchment paper (keep in mind that it will be very hot, so be careful not to touch it).
(2:56) Step 10: Use a rolling pin to roll the mochi dough into a large rectangle, about ¼ inch thick. If the dough sticks at all while rolling, continue to dust the top with cornstarch to prevent sticking.
(3:09) Place the parchment paper with the rolled-out dough on it, onto the baking sheet and refrigerate for 30 minutes.
(3:16) Step 11: Remove the dough from the fridge. And use a cookie cutter or cup to cut circles in the dough. Your circles should be big enough to pinch the dough around the ice cream.
(3:25) Step 12: Pick up one circle of dough and gently brush off cornstarch from the top. Place one scoop of ice cream in the center of the mochi and gently press the dough around the ice cream and pinch the edges of the mochi to seal it. Place mochi on a piece of plastic wrap, bringing the corners of the square to the center and tightly twist at the top to seal it.
(3:37) Step 13: Place mochi back in the freezer with the twisted plastic wrap side down. Continue with remaining dough and ice cream. Freeze for at least one hour before eating.
