Yacon is a perennial from the daisy family - related to the sunflower - and originally from the Andes, this plant is used for culinary and medicinal purposes. Eat the root raw or cooked. Use the leaves as spinach or a wrap. Make yacon syrup from the roots as a sugar alternative for diabetics. It's also a great mid-story plant in your forest garden. A perennial in warm climates and an annual in cooler areas.
