who ATE all the pies?! ;D absolutely love a pie and especially one with hot water crust pastry, am a big fan of hwcp without a doubt. Usually this is used for pork pies because the pastry is robust to be hand raised and stand up of its own accord - not to mention how easy it is to make. I am a late convert to making my own pastry (not puff, thats heavy duty and is readily available( but short crust in the form of hwcp. I haven't as yet, tried the normal shortcrust pastry method - but I will soon.

These pies turned out to be absolutely delicious, any pie filling suggestions gratefully recieved, even some sweet/fruity ideas too.

I also froze 3, and made pie and chips for the boys the other night, cooking 2 pies frozen (still one in the freezer with my name on it :D) pie cooked perfectly on 160c for 30mins, reaching 75c+ for food safety purposes. I did a quick eggwashing of the tops to help with that golden look.

Hot Water Crust Pastry Ingredients:                 

Made 4 individual PIES
                       
300g/14oz plain or all purpose flour  
70g/2 1/2oz butter 
70g/2 1/2oz lard (use butter if you want to avoid lard)   
1 tsp salt (+ I used pepper as well which works really well with savoury pies)  
130ml water
plus 1 egg for eggwash 

pour the water into a pan and bring to the boil.  Add the butter and lard and let it fully melt while simmering.  In a large bowl, add the flour and salt/pepper and make a well.  

Pour the liquid (once fully melted) into the flour and stir using the back of a large spoon, bring together to form a rough dough. 

Pop on a floured surface, and gently knead or bring together (without overworking) into a ball shape. 

Wrap with cling film and pop in fridge for minimum 2 hours. 

It can be made in advance the day before (or freeze it once cold as well)

Filling of your choice: I made an easy Chicken & Veg (peas in this case but can be mushrooms, mixed veg, greens etc)

I found half of this filled 4 good sized pies made from pastry above, froze the rest for another day.

1 onion 
1 garlic (crushed)  (free from allotment)
300g chicken drumstick fillets (cut up into bitesize pieces) 
150g peas (or other veg of your choice)  
1 chicken stock cube (in about 100/150ml just boiled water) 

Fry onion & garlic, add chicken and fry off for 5/10mins. 

Add peas, fry for further 5/10 mins.  Add stock water and let cook for 20+mins.

Set aside til needed (I made mine the day before - popping in fridge)
