• 3 eggs
• ⅔ cup (125g) sugar
• 1 tsp vanilla essence
• ½ cup (125g) neutral oil (no strong flavor)
• 1 tsp baking powder
• 1 cup (125g) all-purpose flour
• 1 cup fresh mango and lychee chunks (or only mango)
• 1 tbsp all-purpose flour (for coating the fruit)

1. In a mixing bowl, add 3 eggs, ⅔ cup sugar, and 1 tsp vanilla essence. Beat until the sugar dissolves and the eggs turn pale and slightly fluffy.
2. Add ½ cup oil (use one without a strong flavor) and mix for one more minute.
3. Add 1 tsp baking powder and gently mix.
4. Sift in 1 cup flour and fold until the batter is smooth and lump-free.
5. Toss 1 cup chopped mangoes and lychees with 1 tbsp flour to prevent them from sinking. Fold the coated fruit into the batter.
