A traditional Christmas dessert, plum cake is a rich and moist fruit cake that's perfect for the Christmas season or use it as a base for Celebration cakes for communion or wedding cakes too. Here's a recipe to make a delicious plum cake at home.

Ingredients:
All Ingredients at Room Temperature

Peels, glazed cherries, Kishmish, truity fruity, any berries of your choice soak in Rum in a glass jar for at least 5 days.
Before making the cake, drain some of the soaked peels and then use.

100 to 150 Gms of drained peels
50 Gms Nuts (cashew nut + walnuts) can add almonds too
100 Gms Butter (I used Amul Butter)
80 Gms Brown/ White Sugar
2 Eggs
60 Gms Caramel Syrup (Recipe link below)
1 Tbsp Glycerin
1 Tsp Vanilla Essence (can add orange essence too)
100 Gms Maida / All Purpose Flour
½ Tsp Baking Powder
¼ Tsp Spice powder. You can also use ready-made cake spice powder which are easily available in shops and online too.
To make it:
(20 gms Cinnamon + 10 gms cloves + 10 gms cardamoms + 1 nutmeg. Grind all to a fine powder)

Use cake loaf tin lined with parchment/butter paper.
I have used bake and serve cake container brought from Arife Lamould.
Size of this container is 11 cm x 9.5 cm x 7 cm(height)
Recipe can be doubled.
Bake at 160 - 170 degrees Celsius for 40 to 50 minutes or toothpick inserted comes out clean.
Baking time varies from oven to oven and size of tin too. So please check
Place an aluminum foil over the cake tin, halfway through if the cake gets too brown from the top.
Bake with lower coil on.
*Net weight after baking 750 gms
