Hobart Precijet+ Combination Oven Clean Down

How a combi oven performs is obviously key, however how easy an oven is to clean and maintain is also crucial. Here Greg, Hobart's development chef, gives us a run through on how to clean down the Hobart Precijet+ at the end of service.

With these ovens, it's literally 2 buttons and you are straight on to the cleaning process.

Hobart have utilised the same technology found in their warewashers to aid in the cleaning process of their ovens. There is a 5 litre container holding the chemicals, the oven then draws these chemicals through during the cleaning process.

Just before you put into a wash cycle we recommend you manually wipe down the inside glass and door. To do this you will find a clip on top of the glass pane, remove the clip and the glass can be opened away from the door. Simply wipe down with a warm, damp cloth and clip back into place.

There is also a drainage channel and door seal that can be wiped down. The seal is also a once piece seal and can be replaced very quickly and easily in house, without requiring an engineer.

You'll notice the door is double glazed. This ensures that when you are cooking at very high temperatures the outer pane will not be hot and there is no risk of burning yourself.

Once you have finished the manual wipe down close the door and you are ready to begin the wash cycle.

Begin by pressing toolbox button, the screen will display all your options. If you require a light clean then you can press start immediately and the 30 minute 'light' clean cycle will begin. If you require a more thorough wash then there are two more options; a 'medium' wash which lasts 33 minutes and a 'deep' full, intense clean only takes 49 minutes.

If you want an even easier way of cleaning you can use the auto-clean option. You can set which wash level you want, a day of the week and a time of the day you want your combi oven to clean itself. This allows to to preset your wash times.

The auto-clean will work even when the oven is in standby mode, the machine will turn itself on and run through the wash cycle. This means you don't have to leave it switched on wasting energy.

It is a fantastic way for sites to monitor chemical usage and ensure the combi ovens are regularly cleaned.

When you set up and confirm the auto-clean programme no one will be able the controls an alter the cleaning schedule unless they have the passcode.
