Popovers are so fun to make, and easy if you know a few tricks. When made with food storage ingredients like egg powder and powdered milk, the vacuum sealed packets are shelf stable for months. How delightful to have dry mix popovers ready to bake at a moment's notice.

Dry Mix Popovers Recipe:

Dry Mix—layer in jar in order given:
1 ½ cups flour measured carefully
½ cup egg powder
½ cup powdered milk
½ tsp salt

When ready to make:
3 tbsp ghee melted and cooled slightly
2 cups lukewarm water

Pour water into blender bowl and turn to lowest setting. Spoon dry mix slowly into blender and mix until completely smooth. With blender still running, add the ghee and mix thoroughly.

Allow batter to rest for 15 minutes while oven heats to 425°F. Place popover pan* in oven to heat for two minutes. Remove pan and spray with cooking spray all over. Pour batter in the wells nearly to the top. Bake for 20 minutes. Reduce oven temp to 350°F and bake an additional 10 minutes. Removed from oven and pierce with paring knife to release steam and prevent sogginess. Serve hot with butter and jam.

*For best results use a popover pan with six wells. A regular muffin tin with 12 wells can be used, but popovers will be smaller and not as puffed.
