📝 Ingredients:
• 6 bone-in, skin-on chicken thighs (approximately 2.2 lbs or 1 kg)
• Salt and freshly ground black pepper, to taste
• Pinch of saffron threads in 1 cup (240 ml) of hot water
• Olive oil, for cooking
• 1 bell pepper, sliced
• 1 brown onion, sliced
• 4 garlic cloves, finely chopped
• 1 tsp salt
• 1 tsp black pepper
• 4 Tbsp lemon juice
• 2 Tbsp water
• Fresh parsley, for garnish
• Serve with rice

🍽️ Instructions:

1. Prepare the Chicken:
Season both sides of the chicken thighs with salt and freshly ground black pepper. In a small bowl, add a pinch of saffron to 1 cup (240 ml) of hot water. Set aside to steep.

2. Sear the Chicken:
Heat a splash of olive oil in a large skillet over medium-high heat. Add the chicken thighs, skin-side down, and cook for 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

3. Sauté the Vegetables:
In the same skillet, add the sliced bell pepper, brown onion, and finely chopped garlic. Sauté for 3-4 minutes, until the vegetables are softened and fragrant. Season with 1 tsp salt and 1 tsp black pepper.

4. Add Chicken and Sauce:
Return the chicken thighs to the skillet, placing them over the sautéed vegetables. Pour the saffron-infused water and 4 Tbsp of lemon juice over the chicken. Add an additional 2 Tbsp of water to the skillet to help the sauce develop.

5. Bake:
Preheat your oven to 375°F (190°C). Transfer the skillet to the oven and bake for 20-30 minutes, or until the chicken is cooked through and tender. o If needed, broil the chicken for 2-3 minutes at the end to brown the skin.

6. Garnish and Serve:
Remove the skillet from the oven and garnish the chicken with freshly chopped parsley. Serve the saffron chicken with rice for a complete and flavorful meal.

Tips:
• Saffron adds a unique flavor to the dish, but a little goes a long way. Adjust the amount based on your taste preference.
• Pair this dish with a light salad or a side of roasted vegetables for an even more complete meal.
