Vegan Mozzarella Cheese using Agar-Agar Powder | Soy, Nut & Gluten-Free

As some of you have requested a cheese recipe using agar-agar powder instead of kappa carrageenan, here's our basic plant-based, soy, nut & gluten-free mozzarella cheese recipe. This is sliceable, meltable & grateable. Hope you like it! 🙂

Ingredients:
85 g | 1 cup cauliflower, cut into medium florets
32 g | ¼ cup tapioca starch
60 ml | ¼ cup water
14 g | 2 Tbsp nutritional yeast flakes, or to taste
15 ml 1 Tbsp apple cider vinegar or lemon juice, or to taste
30 g | 2 Tbsp neutral-tasting oil (canola or grapeseed)
1½ tsp kosher salt, or to taste
½ tsp garlic powder, or to taste
1-2 tsp brine pickled olives (optional)

Agar-agar mixture:
240 g | 1 cup water
25 g | 3 Tbsp agar-agar powder
