The trick to making freeze dried gelato is to have your gelato very cold during the freeze-drying process. The easiest way to do this is to extend freezing time (on your freeze dryer) for 6-12 hours. Here are the settings I recommend:

Initial Freezing Temp: -20f
Extra Freezing time: 6-12 hours
Drying temp: 125f
Extra drying time: 12 hours (you can always stop the process early)
