🟢材料:
鱲魚 520克
蕃茄 500克
鹽 3/4茶匙
薑、蔥 適量

🟢做法:
1️⃣ 鱲魚洗淨後瀝乾。熱鍋下油,加入3/4茶匙鹽、薑和蔥白翻炒,加入可浸過魚面的熱水,水滾起後把魚放入鍋中,水再次煮滾後熄火,浸6至8分鐘(視乎魚的大小而定)。
2️⃣把魚撈出,撒上薑絲蔥絲,淋入熱油和蒸魚豉油。
3️⃣蕃茄洗淨後切塊,熱鍋下油把蕃茄煸炒成泥,倒入浸過魚的水再次煮沸即可。

🟢Ingredients:
Sea breams - 520g
Tomatoes - 500g
Salt - 3/4 teaspoon
Ginger, spring onions - as needed

🟢Cooking Directions:
1️⃣ Rinse and drain the sea breams. Heat some oil in a pan and stir-fry them with salt 3/4 teaspoon, ginger, and spring onions. Add enough hot water to cover the fish and bring to a boil. Once boiling, turn off the heat and add the fish, letting them poach for 6-8 minutes (depending on the size of the fish).
2️⃣ Scoop out the fish from the pan and garnish with ginger and spring onions. Pour hot oil and seafood soy sauce over the fish.
3️⃣ Wash the tomatoes and cut them into chunks. Heat some oil in a pan and stir-fry the tomatoes until they become mashed. Pour the poached fish water into the pan and bring to a boil.
