• 1 teaspoon of chana dal (split chickpeas)
• 2 teaspoon peanut
• A pinch of asafoetida (hing)
• A few curry leaves
• 2-3 green chilies, finely chopped (adjust to your spice preference)
• 1/4 cup of roasted peanuts
• Juice of 1-2 lemons (adjust to taste)
• Salt to taste
• Freshly chopped coriander leaves for garnish
Instructions:
1. Cook the rice vermicelli according to the package instructions. Typically, you would boil water, add the vermicelli, and cook for 3-4 minutes until they become soft. Drain and rinse with cold water to stop the cooking process. Set aside. Or make 3 Nos rice Idiyappam.
2. Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
3. Add urad dal and chana dal. Sauté until they turn golden brown.
4. Add a pinch of asafoetida, curry leaves, and green chilies. Sauté for a minute.
5. Add the cooked rice vermicelli and roasted peanuts. Mix well to combine.
6. Pour the lemon juice over the vermicelli. Add salt to taste.
7. Stir everything together until the lemon juice is evenly distributed and the sevai are well-coated with the seasoning.
8. Garnish with freshly chopped coriander leaves.
9. Serve Lemon Sevai hot as a breakfast dish or snack.
