Muttai Varuval is a popular South Indian dish made from boiled eggs that are marinated and then shallow-fried or deep-fried in a spicy, flavorful coating. The eggs are typically cut in half or left whole, marinated in a mixture of spices, and then fried to create a crispy and delicious outer layer while keeping the inside soft and tender.
Here’s a simple recipe for Muttai Varuval (Egg Fry)

Ingredients:

8 large eggs (boiled)
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp lack gram
1 tsp black pepper
4-6 garlic pods
Curry leaves 2 strings
4 dry chili
Salt to taste
Fresh coriander leaves (for garnish)

Instructions:
Boil the eggs: Boil the eggs in water for about 15 minutes. Peel them once cooled and slice them with the Egg slicer.
Switch on the stove heat the pan slightly later Roast coriander seeds, black pepper, urad dal, garlic pods, jeera and curry leaves and roast for a few minutes. And Add dry red chili and roast for another 2 mins and let it cool down and grind it to a corselle powder.
Frying: In a Kadai heat oil and add mustard, jeera, curry leaves fry until they turn golden brown or crunchy add sliced eggs fry for 2mins
After the eggs develop a light brown add the masala powder fry a little bit later flip the egg slices to another side fry them as mentioned above later add masala powder and leave them for 2mins. Turn off the stove and serve hotly

Serve: Garnish with fresh coriander leaves and serve hot with rice or roti.
