In restaurants, sundubu jjigae comes with some pretty tasty fixings. DuBu serves their version with fried tofu, chilies with anchovies, and, of course, kimchi. The main dish comes out in a traditional stone pot. When it gets to the table, it will be so hot that it’s literally boiling, so exercise caution. A pro tip from our host Matthew Kang: The raw egg that’s cracked on top can help temper the stew; let it chill on the surface for a minute, and then spoon stew over the top so that the egg continues cooking. DuBu’s army stew variation is served with spam and hot dogs, but they also serve up more classic flavored stews filled with oysters and prawns.
