Ingredients & Cooking Method (English)
Ingredients:
Cabbage Leaves: 4 large leaves
Potatoes: 2 medium-sized (peeled and cubed)
Water: 1 glass (for pressure cooking)
Salt: As required
For the Batter:
Gram Flour (Besan): 1 cup
Rice Flour: 3 tbsp (1 + 2 tbsp added separately)
Kashmiri Red Chili Powder: 1 tbsp
Turmeric Powder: ½ tsp
Salt: ½ tsp
Water: Approximately ¾ cup
For the Filling (Masala):
Oil: 1 tbsp
Mustard Seeds: 1 tsp
Onion: 1 medium (finely chopped)
Green Chilies: 2-3 (chopped)
Curry Leaves: 1 sprig
Kashmiri Red Chili Powder: ½ tbsp
Turmeric Powder: ½ tsp
Method:
Boil Potatoes: In a pressure cooker, add the cubed potatoes, 1 glass of water, and ½ tsp salt. Cook for 2 whistles until soft.
Soften Cabbage: Boil water in a large pan. Take the outer cabbage leaves, trim the thick vein from the back to make them flexible, and soak them in the hot water for 30 minutes until they soften.
Prepare Batter: In a bowl, mix gram flour, 1 tbsp rice flour, chili powder, turmeric powder, and salt. Gradually add water to make a smooth, semi-thick batter. Finally, add 2 more tbsp of rice flour for extra crispiness and mix well.
Prepare Filling: Heat 1 tbsp oil in a pan. Splutter mustard seeds, then sauté onions with salt until transparent. Add green chilies, chili powder, and turmeric powder. Sauté until the raw smell goes. Add the boiled potatoes and mash them well into the masala. Mix in curry leaves and let it cool.
Roll and Cut: Take a softened cabbage leaf, pat it dry, and place a portion of the potato filling on one end. Roll it tightly. Cut the roll into equal-sized pieces using a sharp knife.
Fry: Heat oil in a pan for deep frying. Dip each cabbage roll piece into the prepared batter, coating it completely. Fry on medium flame until both sides turn golden brown and crispy.
