To calculate your estimated profit you will need to have an idea on the number of working days (open days) you have in a year and an average number of ice creams you would serve in a working day. If you already serve ice cream then you will have a good idea about this, if not then calculate it by your footfall numbers every day and average it out over a year. Always be cautious in your calculations if you don’t have actual past year numbers, however, at Carpigiani we know that you will always sell more than you think due to the smooth, consistent and creamy taste of the soft serve ice cream.

So we will use a 2.5oz Soft Serve Cone as our working example which has a recommended retail price of £2.00. You need to decide what your expected servings per day will be.
