Recipe: Vegan Sushi Rolls
Ingredients:

• 3 tbsp rice vinegar
• 1 tbsp sugar (optional)
• 5 nori sheets (seaweed)

• 2 tbsp vegan mayonnaise
• Soy sauce, wasabi, and pickled ginger (for serving)
Instructions:
1. Mix rice vinegar and sugar into warm sushi rice, then let it cool.
2. Lay a nori sheet on a bamboo mat. Spread a thin layer of rice evenly, leaving a 1-inch strip uncovered at the top.
