I’m really enjoying making this Kinder’s series. The seasoning packets are a great shortcut to making really flavorful meals with only a few ingredients. I’ve never made chile verde on my own, nor have I ever ordered it from a restaurant, but this recipe will make me take a closer look next time we go out for Mexican. Anyway, absolutely delicious!

You can eat the finished dish as it is, or even thicken the sauce with a little corn starch slurry. But I loved it over rice with pico de gallo as I showed in the video. The yellow rice was super easy and delicious to make – ingredients and instructions included below along with links to a couple of the special ingredients. The links are just there so you can see what to look for; you can find them easily and much cheaper in the Hispanic section at your local Walmart. I bought the Sazon box of 20 packets for about $2 and the ½ ounce Bijol was around 50¢. And, of course, feel free to embellish your rice with veggies and extras as you like!

Today’s Ingredients:
1½ lbs pork shoulder/butt, 1½ – 2 inch pieces
½ cup water
.85 oz packet Kinder’s Chile Verde Seasoning
16 oz jar green tomatillo salsa (heat level of your choice)

Optional for Instant Pot Yellow Rice:
1 cup medium-long grain white rice, rinsed
1 cup water
1 TB apple cider vinegar

1/8 tsp Bijol yellow powder https://amzn.to/3okcAyP

Optionals for serving: tortillas, tortilla chips, cooked rice, cooked beans, etc.

Instructions:
1. Into an unheated Instant Pot, layer the pork, water, Kinder’s chile verde seasoning, and green salsa (salsa on top).
2. Lock and seal the lid and cook on high for 35 minutes followed by a natural pressure release (10-15minutes).
3. Serve as you like and enjoy!

Optional to cook yellow rice (works the same in 3qt or 6qt)
Mix all the ingredients together in the pot. Cook on high for 4 minutes followed by a 10 minute natural pressure release. Fluff with rice paddle and serve!
