Hakka Noodles is a popular Indo-Chinese dish that features stir-fried noodles with a variety of colorful vegetables and aromatic sauces. It's a delightful and flavorful dish that can be easily prepared at home. Here's a simple recipe for making delicious Hakka Noodles:

Ingredients:
200g Hakka noodles (or any other noodles of your choice)
2 tablespoons vegetable oil
3-4 cloves of garlic, finely chopped
1-inch piece of ginger, finely chopped
1 medium onion, thinly sliced
1 cup mixed vegetables (carrots, bell peppers, cabbage, beans, etc.), julienned
2-3 spring onions, chopped (separate the white and green parts)
2 tablespoons soy sauce
1 tablespoon chili sauce (adjust to your spice preference)
1 tablespoon vinegar
1 tablespoon tomato ketchup
Salt to taste
Freshly ground black pepper to taste

Instructions:

1. Boil the Noodles: Cook the Hakka noodles according to the instructions on the packet. Add a pinch of salt and a few drops of oil to prevent them from sticking together. Once cooked, drain the noodles and rinse them under cold water. Keep them aside.

2. Prepare the Vegetables: Heat oil in a wok or a large pan over medium-high heat. Add chopped garlic and ginger, and sauté for a minute until fragrant.

3. Stir-fry Vegetables: Add the sliced onions and sauté until they turn translucent. Now, add the julienned mixed vegetables and stir-fry on high heat for 2-3 minutes. The vegetables should remain crisp and colorful.

4. Sauce Preparation: In a small bowl, mix soy sauce, chili sauce, vinegar, tomato ketchup, salt, and black pepper. Adjust the sauce quantities according to your taste preferences.

5. Noodle Stir-fry: Add the cooked noodles to the pan with the stir-fried vegetables. Toss everything together gently.

6. Sauce Coating: Pour the prepared sauce over the noodles and vegetables. Mix well until the noodles are coated with the sauce evenly.

7. Spring Onions: Add the chopped white part of the spring onions to the noodles and give it a final toss.

8. Serve: Garnish with the green part of the spring onions. Your delicious Hakka Noodles are now ready to be served!

Optional: You can customize this recipe by adding tofu, mushrooms, or any other favorite vegetables of your choice.
