Recipe: No-Churn Strawberry Shortcake Ice Cream Sandwiches
Crust & Topping– 25 shortbread cookies– 1 cup freeze-dried strawberries (crushed, not powdered)– 5 tablespoons unsalted butter, melted– ¼ cup white chocolate, chopped
Crush the cookies and freeze-dried strawberries together. Mix with melted butter and chopped white chocolate until combined. Press half of the mixture firmly into a parchment-lined 8x8 inch pan.

Ice Cream Base– 2 cups cold heavy whipping cream– 1 (14 oz) can sweetened condensed milk– 1 teaspoon vanilla paste (or extract)– ½ cup freeze-dried strawberries, crushed into powder– ½ cup fresh strawberries, finely chopped

Whip the heavy cream to soft peaks. In a separate bowl, mix the condensed milk, vanilla, powdered strawberries, and fresh strawberries. Fold in the whipped cream until fully combined.
Pour the mixture over the bottom crust and smooth it out evenly. Sprinkle the remaining crumb mixture on top and press gently to help it stick.
Cover and freeze overnight, then slice into bars.Store in the freezer for up to 1 week.
