Instructions
1. Wash the rice and soak for 15 minutes. Meanwhile, prepare the rest of the ingredients.
2. In a pressure cooker, heat ghee and add all the whole spices.
Add the onion and green chilli, then saute it until the onion turns translucent.
3. Add the ginger garlic paste, red chilli powder, coriander powder and salt. Saute for 2 minutes.
4. Add the beetroot, sugar and vinegar to help retain the colour of the beetroot. Add the mint and coriander leaves. Saute for a minute.
5. Add the rice and water. Mix and pressure cook for 2 whistles, turning the heat to low after the first whistle.
6. Fluff up the rice and serve warm with raita.
