Soybean Sprouts 3 Ways: Soup + Non-Spicy & Spicy Salad

A lot of you have told me you buy big bags of soybean sprouts but don’t know how to use them all — or want to avoid extra cooking steps. So I’m sharing my easy method to make 3 side dishes in one go! 💡 Boil once, season smart, and enjoy variety without the extra work.

✨ Ingredients

🔸 For the Soup (200g sprouts)

2 Tbsp soy sauce
1 Tbsp minced garlic
1/2 chopped green onion
Salt to taste
1 green chili pepper (optional)
Pinch of MSG (optional)

🔸 For the Salads (400g sprouts)

1/3 carrot, thin matchsticks
2 Tbsp minced garlic
2 Tbsp soy sauce
2 Tbsp sesame oil
Salt to taste
1/2 chopped green onion

🔸 For the Spicy Salad (half of the salad)

1 Tbsp gochugaru (Korean chili flakes)
1/2 Tbsp fish sauce

📝 Instructions

1️⃣ Wash soybean sprouts. Cut carrot & green onions.
2️⃣ Boil all sprouts for 2 minutes.
3️⃣ Take out 2/3 of the sprouts for salad. Drain & rinse in cold water.
4️⃣ Leave 1/3 in the pot. Continue boiling for soup.
5️⃣ Add soup seasonings. Simmer & adjust salt.
6️⃣ Mix salad ingredients with cooled sprouts. Toss well.
7️⃣ Take half of the salad and add spicy seasoning. Toss again.

🍲 Serve the soup warm.
🥗 Serve salads chilled — one mild, one spicy.
