Ingredients:
1/4-1/2 lbs Organic Chicken
1/2 cup Organic brown basmati rice & glutinous rice
2 tbsp Avocado oil
4 big gloves minced organic fresh garlic
1.5 tsp fresh grated organic ginger
1 medium organic yellow onion
2 cups chicken broth
1 cup water
Pinch of saffron
4 Organic pasture raised eggs
1 tbsp Fish sauce
2 tbsp Organic spring onions and 1 tsp fresh parsley
2 tbsp baked oven pork rinds (100% grass fed protein/less fat)
1 tsp real sea Salt-natural unrefined gluten free
1 tsp black pepper
1/2 lime or lemon
Instructions:
1. Marinate the chicken with salt and pepper. Boiled 2 cups of water
in the enameled Dutch oven.
Then, pour chicken into the boiling water and let it cook for about
30-40 minutes until the chicken is tender. Wash the rice 5x and
then let the rice soaked with water for about 30 minutes.
Once chicken is tender, remove from the pan and separate the
broth. Let the chicken cool for 5 minutes and debone. Boiled
eggs for about 15 minutes and then let it cool in cold water. Grind
a pinch of saffron and add 2 tbsp of chicken broth.
2. Heat pan in a medium high and then put the avocado oil. Once pan
is hot, add the garlic until it turns brown and set aside half of the
garlic for toppings. Then, add the fresh ginger and onions until
translucent. Next, add the shredded chicken and stir for about
5 minutes. Add the rice, chicken broth with 1 more cup of
water and also add the saffron. Keep stirring until all ingredients
are mixed together and then add fish sauce. Add salt & pepper.
Toppings:
Eggs (1/2 sliced into 3 pieces)
Spring onions and parsley ( pinch)
Pork rinds (pinch)
Roasted garlic (pinch)
Squeeze Lime or lemon juice (1/2 tsp)
Add Fish sauce or salt if needed

Facts:
Most of this ingredients that I used are mostly available at Whole Foods Market, Giant, Walmart, Amazon or Costco. I recommend that you stop using ingredients that is bad for your health.
Salt:
Celtic Sea salt - is unrefined salt, more minerals, tastes really good and also will not spike your blood pressure at all. While other types of salt is processed, bleached and can spike your blood pressure.
Avocado Oil - is 💯 pure avocado oil, none oxidized, none rancid, and none expired. I only used 1 brand which is the Chosen that I always buy at Costco.
On the other hand, Canola oil, soybean, sunflower, vegetable, corn oil are highly processed, are GMO & highly refined. It’s very cheap and also it’s devastating for your health.
Garlic - best garlic to buy is local that still has roots on top and also that’s grown in California are best or made USA. Compare to those garlic that are imported from China, those garlic has bleached with chlorine, grown in sewer water, high in lead and heavy metals. You can easily spot the Garlic from China, no roots, it’s perfectly white and clean on top.
Eggs - Best eggs that I love to buy is the organic pasture raised from Vital farms or you can buy locally sourced pasture eggs from a nearby farm, chickens are outside running, soaking up the sun, eating bugs and worms, yolk is vibrant, and high quality. While other types of eggs like cage free or free range they are feed in soy, GMO corn, and they never go outside.
Chicken - Organic chicken is so much better, raised in a natural environment, natural feed without antibiotic and high quality.
Avoid hormone free, conventional and cage free as they may lead to hormone disruption, contains antibiotics, contain harmful bacteria, and living conditions are known for being nothing short of gross & highly disturbing.
We only live once, might as well eat the high quality food with best ingredients. 😉
