Ingredients:
2 medium eggplants (about 1 lb / 450 g)
1 cup tomato puree or sauce (200 ml)
1/2 cup water (120 ml)
1 tablespoon olive oil
1 tablespoon dried basil or a few fresh chopped basil leaves
1 medium onion (about 100 g / 3.5 oz)
100 g / 3.5 oz mushrooms
2 cloves garlic
Salt and black pepper to taste
2 sheets of phyllo dough or 2 lasagna sheets
1/2 cup grated cheese

Place the casserole in the air fryer or a regular oven and bake at 360°F (about 180°C) for around 25 minutes.
