Ingredients:
1 cup boiled spaghetti (you can use any pasta of choice, I am using whole wheat spaghetti)
2 tsp olive oil
2-3 cloves garlic, minced
1 cup mixed vegetables (bell peppers, broccoli, carrots, zucchini, mushrooms etc.)
1 medium onion, thinly sliced
1/2 tsp chilli flakes
1 tsp mixed herbs
1 tsp garlic powder + salt
1-2 tbsp Oats powder
1 tbsp beetroot puree
1/4 cup milk + 1/4 cup pasta water for cooking
Fresh basil leaves
Extra Chilli Flakes & Basil for serving
Instructions:
Boil the pasta with some salt and keep aside. Also, keep some of the pasta water aside
Heat oil, add garlic, onions & saute, add broccoli, carrots & toss
Add mushrooms, zucchini, herbs, chilli flakes, garlic pdr
Add oats powder, milk, pasta water, beetroot puree, mix, then add the pasta
Garnish with basil, mix & ENJOY!!!
